Gorgeous Cakes- delicious celebration cakes handmade in Shropshire
All our cakes are baked to order using only the finest ingredients available (we crack each and every egg by hand), using our own family cake recipes, so that our cakes taste just as good as they look. Visitors are called upon to sample new flavours and every combination we offer is tried and tested on willing volunteers!
Fruit cakes
The fruit we use in our fruit cake recipe is first soaked in brandy or liqueur to ensure that it is plump and soft, After baking, each cake is slowly matured with more alcohol for at least a month before decorating, resulting in a cake that is moist and rich and full of flavour. This slow maturing allows the flavour to develop and makes for easier cutting. (Unmatured fruit cake tastes good but is not so easy to slice into neat portions)
Sponge cakes
Our sponge cakes can be created in a range of tempting flavours including rich dark chocolate, luscious lemon, real vanilla, coffee and walnut and carrot cake. If you have a particular favourite type of cake we are open to suggestions! We use a traditional madeira cake recipe and our chocolate espresso version is to die for!
The filling
Our sponge cakes can be filled with a light butter-cream in a flavour of your choice, We use real butter in our butter-cream, no margarine or vegetable fats, and we add fresh flavourings such as real vanilla extract, fresh lemon curd, dark chocolate ganache, or our own praline. You can choose any combination you like. You can also choose an extra luxurious touch by having the sponge brushed with a liqueur syrup before the filling is added. Baileys Irish Cream is particularly good with rich dark chocolate!
The icing
Sponge cakes are covered with a thin layer of butter-cream before being finished with a layer of fondant icing. We make our own icing as we think it has a better flavour than commercially produced fondant. We can also add a thin layer of marzipan under the fondant if you like.
Fruit cakes are covered with a marzipan layer and finished with fondant. However, if you dislike marzipan we can replace this layer with a second thin layer of fondant icing to ensure a smooth surface to the finished cake.
